5 Delectable Lobster Recipes you Have to Try

The world’s biggest lobster was over 44 pounds, quite a meal in itself. But you’ll have to settle for buying lobster meat at the supermarket. If you can get a pound or so, here are five easy recipes to bring smiles all around the table.

1. Spicy Lobster Cakes

Egg 1
Fresh lobster meat, diced 1¼ lb.
Cilantro, minced ¼ cup
Hot sauce 2 Tbsp.
Cayenne pepper 1/4 tsp.
Corn meal, ground fine ½ cup
Cracker crumbs, 1½ cups
Lemon juice, 1 Tbsp.

In large bowl, mix everything except cracker crumbs.
Form 2-inch patties out of the lobster mix and dip into cracker crumbs on both sides. Oil a large pan, and add cakes. Cook on stove 4-5 minutes or until golden, then flip over, and cook the other side.

2. Lobster Spread

1 cup mayonnaise
8 oz. cream cheese
½ cup Romano cheese
1 Tablespoon fresh garlic, chopped
3 Tablespoons vermouth
1 Teaspoon mustard
1 cup chopped artichoke hearts
2 cups lobster meat, diced

Mix first six ingredients until creamy. Add artichokes and lobster. Blend in gently.

Bake at 350°F until lightly browned on top. Serve with choice of chips or bread.

3. Crunchy Lobster Salad

1 pound lobster meat
1 cup celery, diced
1/2 cup onion, diced
1 cup mayonnaise
4 tablespoons curry powder
1 can/bag crunchy chow mein noodles
Combine first six ingredients in a large bowl and refrigerate. Before serving add the noodles and toss. Garnish on a platter with your choice of sliced fruit and berries

4. Lobster Chowder

16 oz cooked lobster meat
16 ounce bag frozen corn
3 cups soup stock

2 cups carrots, shredded
1 large potato, peeled and cut into cubes
1 teaspoon thyme
1 bay leaf
3 cups milk
1/4 cup flour
3 tablespoons sherry
1 tablespoon butter
Add all but lobster and sherry to pot, stir, cover and let simmer 25-30 min; stir in lobster and sherry and serve hot

5. Lobster Pasta

Bow pasta, cooked 3 cups
Lobster meat, cooked 12 oz.
Celery chunks 2 cups
Scallions, sliced 1 ea.
Diced large tomato
Basil 2 Tbsp.
Parmesan, grated 1 cup
White wine ¼ cup
Lobster stock, 1/2 cup
Heavy cream 1/3 cup
1 Tbsp. butter

Add tomatoes, the stock, wine, to large pot or pan and cook to reduce to about half.
Add the pasta, basil, cream, and seasoning and bring to a boil, reduce to a simmer, then add the lobster and cook 1 minute. Stir in cheese, put in serving platter and sprinkle with parsley
